Our winter à la carte menu features seasonal combinations that simply belong to this time of year — ranging from vegetarian and meat-free dishes to honest, hearty classics.
What’s New on the Menu
Among the new additions is crispy suckling pig knuckle with ham sauce, stuffing with dried fruit, sautéed pointed cabbage and fermented cabbage.From our meat-free offerings, you can look forward to a gratinated cauliflower steak with black truffle or a stuffed thyme bun with Szeged-style sauce (in a vegetarian version).
The menu is complemented by winter ingredients and flavours such as quince chutney, Jerusalem artichokes, black garlic mayonnaise, and aronia berries with ginger, appearing in various forms across individual courses.
Červený Jelen Classics
Naturally, our signature dishes remain part of the menu. Grilled steaks continue to be a staple, as does our slow-roasted beef brisket, served with roasted Jerusalem artichokes, grilled golden and red beetroot, kale and Špork barbecue sauce.
Also not to be missed is the veal schnitzel from the flower tip, fried in clarified butter. You can enjoy it either with a light potato salad with yogurt, apple, celery and pickled cucumber, or with buttery mashed potatoes, cucumber salad and dill dressing.
The menu also continues to feature beef “Tafelspitz” in a rich broth with lovage, served with buttered baby potatoes, apple with horseradish, sautéed spinach and chive velouté.
